Within a group of 22 senior residences (EHPAD), we were able to test Skeal with the staff of a city center facility in the dining room working close to the kitchen and the caregivers :

As part of the ANR ERMES project, we wanted to assess the food consumption of students (around 300) eating lunch in the cafeteria at several schools in the Île-de-France region. In order to address the methodological challenges associated with recording and quantifying food consumption, we chose to collaborate with Skeal.
This technological approach relies on a standard off-the-shelf tablet that makes it easy to collect data from photos of trays and automatically perform nutritional analysis. By automating these processes, we saved many hours of work that would have been required for manual consumption analysis.
It is worth highlighting the personalized support provided by Skeal, which enabled us to have a user-friendly application specifically tailored to our needs.
For nine months starting in November 2025, researchers from the CNRS will photograph children's meal trays served in the cafeteria before and after consumption at nine primary schools. Individual and personal follow-up will be carried out afterwards to measure:
- the consumption rate by type of dish, particularly fruit and vegetables,
- the most and least popular dishes,
- other indicators will be measured by the scientists.






To install the Meal recording application, you need to use a mobile tablet, whether Android or Apple, equipped with a back camera with fairly recent features and performance. In this case, it's more practical to use a magnetically-attached table stand as shown in our illustrations, which are available from many internet marketplaces.
In an other hand, you would be asked to upload and keep updated at least two files from your information system :
- your residents table,
- your menus and food items or dishes.
Menu data can be read from a single PDF to populate the dish table in Skeal. Similarly, the portion or nutritional values of each dish can be filled in by the AI, if they are missing on your side.

Thanks to our experience, we have incorporated to our recording tools, our prompt ingineering and AI fine-tuning processes, all the biases you might encounter when measuring unstructured data sources such as plates or food trays. * The statistics come from a proof-of-concept study carried out in a French EHPAD in 2024 over a 1-week period, measuring every dish served at lunch to 30 residents. As a result, 738 dishes were analyzed.
